500g Ground Sausage meat
4 eggs
1 cup mozzarella cheese
1 green onion (chopped)

Instructions
Set Ninja Foodi to Saute
Add in oil and saute potatoes, salt, pepper, and garlic
Close the lid and Air Crisp at 400ºF for 10 minutes
Add 1 tbsp Butter
Saute onions and mushrooms for 3 minutes
Add the sausage meat and cook for about 3 minutes (Break the sausage into pieces as it cooks)
Close the lid and Air Crisp at 400ºF for 10 minutes
Make 4 little wells and add eggs
Spread shredded mozzarella cheese around eggs
Close the lid and Air Crisp at 400ºF 5 minutes or until desired doneness
Garnish with green onion before serving

We love the air crisp feature on these One-pot cookers because it gives the sausage and potatoes a great crispy texture. This feature also cooks the eggs to perfection including the runny egg yolks. Add the finishing touch of gooey melted mozzarella cheese on top and there you have it, a hearty breakfast for champions!
Naturally gluten-free, this dish is so simple and versatile - mix up the ingredients as you see fit. No sausage? No problem! Use ham, bacon or whatever you have on hand. Mix more than one for an even more decadent twist.

Notes
- If you don't have ground sausage meat, just remove the casing from sausages and chop them up
- You can also substitute the sausage for ham, bacon or any other meat you have on hand
- For increased vegetable content add in some diced peppers, cherry tomatoes, or any other favorite veggies. Be sure to saute them before setting the Air Crisp so they don't get soggy.
