Ingredients
1 tbsp avocado oil
2 eggs, beaten
1 chicken breast, cooked and diced
2 tbsp corn, blanched
1/4 cup kale, chopped
1 cup quinoa, cooked
Salt and pepper, to taste

Instructions
Add oil in a skillet over medium-high heat
Add egg and cook until lightly scrambled
Push eggs to the side of the skillet
Add more oil to the skillet
Add chicken, corn, kale and a pinch of salt & pepper
Stir ingredients together and cook until fully heated (2-3 mins)
Stir in quinoa and add a pinch of salt and pepper
Combine all ingredients and cook for another 2-3 minutes

Notes
- It's best to use quinoa that has been cooled down before cooking so it's dry enough to give the stir-fry a good texture
- You can add in any vegetables you prefer- carrots, peas, peppers and green onions work well
- If you prefer not to use chicken, diced ham or ground beef work just as well
