
Chinese Steamed Chicken with Ginger Scallion Sauce

1 cup white rice
2 1/4 cups water
1 whole chicken (2lbs)
2 ginger slices
1 ginger root (peeled)
8 scallions
3/4 tsp salt
1/4 cup vegetable oil

Instructions
Add 1 cup of rice into a bowl
Add water and swirl the rice around to wash out the starch
Strain out the water and repeat the wash for a total of 3 times
Add 1 cup of water to the Instant Pot
Place the chicken into the Instant Pot
Place 2 ginger slices and 2 scallions into the cavity of the chicken
Season the top and bottom of the chicken with a pinch salt
Place a rack on top of the chicken
Place rice in a separate pan and lay it on top of the rack in the inner pot
Add 1/2 tsp of salt and 1 cup of water to the rice
Apply the pressure cook lid and Pressure Cook for 15 minutes
When pressure cooking is complete allow the pressure to release naturally for 10 minutes
Press the vent button to manually release any remaining pressure
Remove the rice and chicken and set aside
Dice 6 scallions
Peel and slice the ginger
Smash the ginger using the blade of the knife and then finely chop it into small pieces
Set Instant Pot to Saute
Add a 1/4 cup of vegetable oil into the Instant Pot and saute a 1/2 cup of chopped ginger
Add a 1/2 cup of diced scallions and season with 1/2 tsp of salt
Stir everything together and saute for 1 minute
Carve the chicken by removing the dark meat (wings, legs, and thighs)
Remove the 2 chicken breasts and slice the white meat into bite-sized pieces
Serve the chicken over rice and top with ginger scallion sauce

- This recipe was made using the Instant Pot Duo, a multi-use programmable cooker that can pressure cook, saute, slow cook, steam, warm and also make yogurt and rice.
- You can also make this recipe using a Ninja Foodi, a programmable multi-use pressure cooker that can also steam, saute, slow cook, dehydrate, bake, broil, roast and air crisp.
- We used a free-range chicken, however, any type of whole chicken will work well for this recipe
- Be sure to check that the chicken has reached an internal temperature of 165° F before serving
- When checking the chicken for doneness we like to use the ThermoPro TP03 Digital Instant Read Meat Thermometer as we find that it's easy to use and the readings are fast and accurate.
