2 lbs/1kg pork belly
12fl oz/350 mL beer
1 tbsp five-spice powder
1 tsp kosher salt

Instructions
Poke tiny holes in the pork belly skin using a meat tenderizer
Add beer, five-spice powder and 1 tsp of Kosher salt into the Instant Pot
Gently lay the pork belly inside the pot skin-side up (don't submerge the skin in the liquid)
Pressure cook on HIGH for 30 minutes
Allow the pork to natural release for 10 minutes
After 10 minutes, press the VENT button to manually release any remaining pressure and remove the pork belly from the pot
Let it cool for 20 minutes
Rub 1/4 cup of Kosher salt on top of the pork belly skin
Place the pork belly onto a tray in the Instant Pot skin-side up
Apply the Air Fry lid and air fry at 400ºF for 10 Minutes
Remove the pork belly from the Instant pot and carefully remove the salt crust from the top of the pork belly skin
Place the pork belly back onto the tray in the Instant Pot skin-side up
Broil for 20 minutes or until skin reaches desired crispiness
Lay the pork belly on a cutting board skin-side down and cut into bite-sized pieces

Notes
- Poking holes in the skin allow the fat to render off and thus giving you a very crispy skin. We like using a meat tenderizer since it's durable and sharp enough to poke through the skin.
- It's best to use either Kosher or rock salt on top of the skin- avoid using iodized salt or else the skin will become too salty
- For best results, apply the salt to the skin and let the salt dry out the pork skin overnight in the fridge.
- This recipe was made using an Instant Pot Duo Crisp, a multi-use programmable cooker that can pressure cook, saute, slow cook, steam, sous vide, air fry, roast, bake, broil and dehydrate.
- If you don't have the air fry option, you can make this recipe using any Instant Pot compatible with an Air Fryer Lid to achieve the same results.
- You can also make this recipe using the Ninja Foodi, a programmable multi-use pressure cooker that can also steam, saute, slow cook, dehydrate, bake, broil, roast and air crisp.

Do you take the beer liquid out before you air crisp it, please?
Yes it’s best to remove the liquid before air frying to help increase the hot air circulation around the meat.

Certainly! The beer is really just to enhance the flavor and provide a hint of the beer aroma into the meat. If you prefer not to use it water will work just as well.
