
One-Pot Osso Buco with Creamy Polenta

Osso Buco Veal Shanks
2 (3lbs/1.5kg) Veal Shanks (3" thick)
1/2 cup + 2 tbsp Flour
2 tbsp Olive Oil
2 tbsp Butter
1 Onion (diced)
2 cups Celery (chopped)
2 cups Carrots (diced)
2 cloves Garlic (minced)
1 tbsp Rosemary (chopped)
1 tsp Salt
1/2 tsp Pepper
4 cups Beef Broth
2 cups Canned Whole Tomatoes
2 Bay Leaves
1 cup Red Wine
Creamy Polenta
1 cup Polenta
4 cups Water
1 tsp Salt
2 tbsp Parmesan Cheese (grated)
2 tbsp Butter

Instructions
Season both sides of the veal shanks with salt & pepper
Place 1/2 cup of flour on a plate and dredge the veal shanks by coating all sides with flour
Set the Instant Pot to Saute-High
Add 2 tbsp of butter and 2 tbsp of olive oil into the hot Instant Pot
Sear the veal shanks on all sides until evenly browned
Remove the veal shanks from the pot and set aside
Saute the onions, celery, and carrots in the Instant Pot
Add the minced garlic and rosemary, then season with 1 tsp of salt and 1/2 tsp of pepper
Saute the vegetables together and mix in 2 tbsp of flour
Add the canned tomatoes and pour in the beef broth
Add 2 bay leaves and pour in the red wine
Stir everything together making sure to scrape any bits from the bottom of the pot and bring the mixture to a gentle boil
Place the veal shanks back into the pot making sure to submerge them in the liquid
Apply the pressure cooker lid and Pressure Cook on High for 60 minutes
Allow the pressure to release naturally for 15 minutes and then manually release any remaining pressure
Remove the veal shanks and set aside
Set the Instant Pot to Saute-High
Bring the remaining sauce to a boil and reduce until it thickens to desired consistency
Serve the osso buco and vegetables over the polenta and drizzle with sauce
Set the Instant Pot to Saute-High
Add 4 cups of water into the Instant Pot
Mix in 1 cup of polenta and 1 tsp of salt
Bring to a gentle simmer and apply the pressure cooker lid
Pressure Cook on High for 8 minutes
Allow the pressure to release naturally for 10 minutes and then manually release any remaining pressure
Set the Instant Pot to Saute-High
Stir in the butter and parmesan cheese
Simmer the polenta while stirring until it thickens to desired consistency

Notes
- Let the veal shanks come to room temperature before searing.
- Pressure cook times listed are for 3" thick veal shanks, for thinner 1-2" cuts pressure cook times can be adjusted between 30-40 minutes.
