Instructions
Preheat oven to 400ºF
Dice the vegetables into large pieces and lay them on the sheet pan. Don't cut them too small or they will cook too fast in the oven.
Place the chicken breasts on top of the vegetables
Season the chicken and vegetables with salt and pepper
Spray olive oil on the chicken and vegetables
Bake at 400ºF for 15 minutes
Take out the sheet pan and generously baste the chicken and vegetables with Honey Garlic Sauce
Put back into the oven for another 10 minutes or until the chicken reaches an internal temperature of 165ºF
Notes
- Make sure to cut the vegetables in large pieces so they don't cook too fast in the oven
- Try to cut the vegetables about the same time so they cook more evenly
- Cooking times for the chicken breasts may vary depending on size and thickness- it's best to always check that the internal temperature of the chicken breast reaches 165ºF before serving
- When checking the chicken breasts for doneness we like to use the ThermoPro TP03 Digital Instant Read Meat Thermometer as we find that it's easy to use and the readings are fast and accurate
- This recipe was made using a Nordic Ware Aluminum Commercial Sheet Pan as we like its strength, durability and even heat distribution
