What is Surf and Turf?
Surf and Turf or "Surf 'n' Turf" is a dish that combines seafood and meat. The term "Surf" refers to any type of seafood with lobster, crab, shrimp, and scallops being the most common menu items. The term "Turf" refers to meats from land-dwelling animals and is typically some form of beef steak.
Can you cook frozen steaks in an Air Fryer?
Yes, you can cook a steak from frozen in an air fryer however you would need to adjust your timing depending on the cut and thickness of the steak. We do not recommend cooking a steak from frozen in an air fryer as it can result in uneven cooking. If your steak is frozen, defrost it in the fridge overnight, or let it sit at room temperature for a few hours until it thaws. In fact, for optimal results when cooking any type of steak, it's best practice to let the steak get to room temperature before cooking so the heat distributes evenly and cooks the steak throughout.
How can you tell if your steak is done?
There are many different types of steak cuts and everyone likes their steak to a different degree of doneness. So how can you tell if your steak is done? There are different ways to check a steak's doneness by appearance or texture, but the best and most accurate way to determine the doneness of steak is to check its internal temperature using a meat thermometer.
Rare: internal temperature of 140°F (60°C)
Medium Rare: internal temperature of 145°F (63°C)
Medium: Internal temperature of 160°F (70°C)
Well Done: Internal temperature of 170°F (76°C)
How do you butterfly Lobster Tails?
A common way to cook a lobster tail is to butterfly the lobster meat so it cooks more evenly. Butterflying a lobster tail involves cutting open the shell, pulling out the lobster meat and spreading it on top of the closed shell.
STEP 1: Using a sharp pair of kitchen shears, cut lengthwise down the center of the tail shell stopping at the tail fins
STEP 2: Spread the shell apart and firmly but gently separate the lobster meat from the inside shell making sure to keep the meat attached at the base of the tail fins.
STEP 3: Pull the lobster meat out as a single piece and squeeze the tail shell closed so that the meat rests on top of the shell.
Can you cook frozen lobster tails in an Air Fryer?
Yes, you can cook frozen lobster tails in an air fryer however similar to frozen steaks, cooking times would need to be adjusted. We prefer to cook using thawed lobster tails since they are much easier to butterfly, prepare and cook. Lobster can easily be defrosted in the fridge overnight, or if you need to thaw a frozen lobster tail quickly, place it in a sealed bag and submerge in cold water for 30-60 minutes or until fully thawed.
What side dishes go with Surf and Turf?
There are many different sides that pair well with Surf and Turf. Since the meat and seafood are proteins most side dishes are vegetable and carb-based. Common Surf and Turf vegetable sides include broccoli, mushrooms, asparagus, zucchini, and corn. There are also a variety of carbs that pair well with Surf and Turf dishes including mac and cheese, mashed or baked potatoes, pasta, and french fries.
How can I make Air Fryer Steak and Lobster if I don't have an Instant Pot Duo Crisp?
We used the Instant Pot Duo Crisp to make our ribeye steak and lobster tails as this Instant Pot model has a separate Air Fryer lid with Air Fry and Broil functions. You can make this recipe using the Ninja Foodi or any other multi-functional device that has an Air Fry or Broil option.
If your One-Pot device doesn't have an Air Fryer lid this recipe can easily be made using a conventional oven. Simply add oil to a hot cast-iron skillet and sear the seasoned steak on both sides until browned. Place the skillet directly in the oven and bake at 375ºF for 12 minutes or until it reaches desired doneness. Place the seasoned lobster tails on a baking sheet and bake at 375ºF for 7-8 minutes or until it reaches desired doneness.
Notes
- Allow the steak to come to room temperature before broiling to ensure even cooking throughout
- Broiling times for the steak are approximate based on a 2" thick ribeye. Adjust your broiling time as necessary for your steak cut and based on your desired doneness.
- When butterflying the lobster tails, be careful not to rip the lobster meat or detach it from the base of the tail fins. Using your fingers firmly pull the lobster meat away from the shell leaving it connected at the base of the tail fins and pull it out in one piece
- Adding garlic butter to the steak and lobster after cooking is optional and can be omitted based on preference
- This recipe was made using an Instant Pot Duo Crisp, a multi-use programmable cooker that can pressure cook, saute, slow cook, steam, sous vide, air fry, roast, bake, broil and dehydrate.
- You can also make this recipe using the Ninja Foodi, a programmable multi-use pressure cooker that can also steam, saute, slow cook, dehydrate, bake, broil, roast and air crisp.
- If you prefer to use a conventional oven, simply add oil to a hot cast-iron skillet and sear the seasoned steak on both sides until browned. Place the skillet directly in the oven and bake at 375ºF for 12 minutes or until it reaches desired doneness. Place the seasoned lobster tails on a baking sheet and bake at 375ºF for 7-8 minutes or until it reaches desired doneness.

They took between 10 to 15 minutes. They were great and cooked through. Will be passing this recipe on.
